Cold winter days and food seem to fit together like a hand in a glove.  Many people start off the New Year resolving to eat healthier with more vegetables & fruits and the Activity Department’s Skillet Cuisine has jumped on that bandwagon. We have tried some new recipes to brighten the winter days. With a nod to the coming Winter Olympics, many of these treats have an international flair.  For example, we sampled Parsnip Latkes for a taste of Jewish tradition, Brazilian Fried Bananas, and Irish Garden Potato Pancakes with zucchini & carrots.  The veggies gave a sense of munching our way through a seed catalog, longing for spring.

  In February, Chinese Potstickers, Egg Rolls, Baked Tofu, and Green Dragon Drinks are on our calendar during the Olympic games to offer a taste of Beijing.  Valentine Month will also feature some cupcakes and mini cherry pies for some sweetness.  Make Your Own Heart Healthy Pizzas on tortillas with plenty of veggie choices will fill out a season of delicious treats.  All these events complement the tasty, homemade goodness of the Dietary Department’s wonderful hearty menu every day!

Winter food activities will keep us smiling until the first days of spring are back in SE Iowa! Bon appetit!
