Here in Montrose during the month of August, Watermelon is on everyone’s minds as the town prepares for the Annual Montrose Watermelon Festival.  Our kitchen staff prepare as well by serving watermelon many times throughout the month and our residents love it!  We like to come up with a couple new recipes using watermelon and this year we are going to treat our residents to Watermelon Salsa with tortilla chips to enjoy after they watch the Watermelon Parade that goes right by our facility.  We think they will enjoy this cool, refreshing snack! Here is the recipe that we will be using:

Watermelon Salsa

1 ½ teaspoons lime zest

¼ cup fresh lime juice

1 tablespoon sugar

Ground pepper

3 cups seeded and finely chopped watermelon

1 cucumber peeled, seeded and diced

1 mango peeled and diced

1 jalapeno pepper seeded and diced

1 small red onion finely chopped

8 fresh basil leaves finely chopped

½ teaspoon fresh garlic finely minced

Tortilla or Pita chips for dipping
